Rim diameter doesn't matter when it comes to offset, rim width does. Assuming you're talking 7 inch width, an offset of +37 will maintain the same clearance to the strut. That goes for any diameter 7-inch rim. An offset of +45 will reduce the clearance to the strut by almost 1 cm. With a wider tire, that could be a problem.

the stock wheels are 6" do adding an extra inch is about 26mm extra. using the same offset as stock will distribute 13mm on the inside and 13mm on the outside...

example: if the stock 15"x6" offset is 45mm and you are putting on a X"x7" 40mm offset wheel (5mm difference), 8mm (subtract 5 from 13) will be on the inside towards the chassis and 18mm (add 5 to 13) will hang out towards the fender.

either way you have an extra inch of wheel width to deal with... put it inside or outside, or split it between the two somewhere.

if the stock offset is 45mm and you want the extra inch to go on the outside look for a 32mm offset wheel

if the stock offset is 45mm and you want the extra inch to go on the inside look for a 58 mm offset wheel.

if you are confused by all the math try this site (http://toy4two.home.mindspring.com/offset.html) out.
