EP is the standard name for 2001 and up Civic's in general. I take it that EP3, stands for a Civic 3 Door. But I'm not 100% sure on this one.

I simply call my car a 2002 Civic SiR (in Canada).

why ep? i don't know. that's what the japanese use to classify their cars, like the old-school corolla is an AE86...

actually the previous model CTR is an ek9, so that wouldn't coincide with the number of doors theory. don't ask me why i need to know. maybe if we wanted to order parts from japan it might be useful to have our model number.

Pretty much all manufacturers use some kind of chassis code for their cars, and I'm guessing it just helps identify things. It's easier to say a part fits the E46-chassis BMW vs. listing every combination of the current 3 Series: 318i, 323i, 323Ci, 328i, 328Ci, 330i and so on.

Lately, it has just become a little more common to use the chassis designations, especially with enthusiasts from all over the world trading ideas thanks to the Internet. When my parents bought their 240SX back in '91, no one called it an S13 (or whatever the exact code is.)
