I want to use a 5mm (maybe 10mm) wheel spacer on all four corners
do you guys think this would be ok w/ the stock wheel studs?
how large of a spacer can i go with before i would need to get longer/extended wheel studs?

As a general rule, the minimum thread engagement should be the thickness of the stud, 12 mm. You can put on a temporary spacer (washers or anything of the right thickness that can fit between the wheel and the hub) for testing. Put some grease on the thread and screw on the lug, take it off and see how far it threads on.

H&R 5mm spacer will work fine with the regular length studs. If you plan to go with the 10mm, then you'll need longer studs.

All of the H&R spacers for stud applications come with longer studs. Sure, 5mm may not seem like much, but it's enough to be unsafe if you use lose that much thread - possibly more if you have aftermarket wheels that have thicker mounting surfaces. The longer studs are provided for a reason. It's a good idea to use them.
