i do this too, like if i have to accellerate real hard 1st 2nd and like half through third, ill go ahead and put it in 5th. does this really hurt anything?

3rd to 5th? Heck, I've shifted fairly often from 2nd to 5th. On a freeway entrance ramp near my place, my shifting often goes 1-2-5 -- 2nd is good for 55 MPH, and that's plenty fast for 5th gear.

If the road speed and engine revs line up well enough, then it's no problem. The shifters on bicycles are the ones where sequential shifting is recommended, what with the chain's ability to jump off the gears entirely.

Sequential shifting on race cars is to better avoid missed shifts. It's difficult to accidentally downshift from 5th to 2nd if the transmission won't allow it.
