When I did mine, I used 220 grit very lightly. I don't think you really need to use any sand paper, just make sure the surface is clean.
For paint I actually used a Dupli-Color Perfect Match (touch up for car paint), and it seems to be holding up very well. There is special paint for the dash/interior.
I did three coats, and it looks great.

For me painting is a big mistake. I personally like wrapping with vinly. If you dont like it, just remove it.

I did a test strip with vinyl before I painted my dash, but when I took that test strip off, some of the original paint came off as well. So I just ended up painting it, if anything I can always paint it back.

i had mine painted VBP along with the those silver tabs on the doors (oh shit handles) lol it came out great .... i would recommend sanding with a super fine grit sand paper for sure and then maybe even a coat of plastic primer... that dash takes more contact then you really assume or expect last thing u want is a cheap paint job and it chips or scratches right through... but thats just my i figure it ur gonna do it do it right

So the entire dash? Damn I was just assuming that shifter and head unit/vents area.
Personally I wouldn't paint it unless I had to, but its up to you. If you do paint it, I would stick to the original colour.

Yeah sure, but painting over and over again will not get u anywhere. Cause you cant get back to your original look and surface.

^^^ Also it is very important what brand you use and who wraps it and removes it. Amateur wrapping could take off your original paint like u said. It requires some kills and time.

Do you happen to have the paint code for the original factory trim? Silver??? Edit>> Used Duplicolor Perfect Match duplicates Ford color Silver. A tad lighter than stock but looks clean.
